Smokey Chipotle Chicken

Welcome to our newest arrival from the kitchen: tender pieces of slow-cooked chicken thigh in a mix of spices including cumin seeds, smoked paprika and chipotle with a tomato based sauce. Fresh, crunchy green and red capsicum contrast this texture and the meal is served with quinoa and shredded carrot, gently spiced with sumac.

“The hero of this dish is definitely the beautifully smokey chipotle flavour with toasted cumin seeds” explains Charlotte. “Lots of Mexican-inspired dishes use rice but, for this meal, we felt quinoa worked better. We also spent a lot of time in the kitchen experimenting with different combinations of spices to make sure we gave the dish plenty of flavour and substance.”

“This is a great meal for anyone” added Charlotte “but I’m particularly proud that Smokey Chipotle Chicken is suitable for people on a Low FODMAP diet as Mexican-inspired dishes are not typically suitable for them.”  

Smokey Chipotle Chicken is perfect for a healthy lunch or dinner. If you are extra hungry, or want to share with your partner, add tortillas or tacos and perhaps some extra chilli, yoghurt and cheese.

This meal is suitable for anyone following a gluten free, Low FODMAP or lactose free diet.
