A delicious way to reduce waste

At We Feed You we are BIG fans of seasonal eating and reducing food waste. OzHarvest tells us that in Australia one of the 5 shopping bags we bring home ends up in the bin and that globally nearly half of the fruit and vegetables produced are wasted. We don’t know about you, but that doesn’t sit well with us at We Feed You. 

With that said, we bring you a solution to reduce waste of stone fruits - think peaches, apricots, nectarines and plums – and it couldn’t be easier! 

Roasting these fruits is delicious and a great way to use up lots of fruit or fruit that sat in the fruit bowl a day or 2 too long. It’s as simple as cutting up stone fruits (bonus points for mixing up the fruit!) into quarters and placing in a baking dish, add 2 teaspoons of brown sugar (this draws the juice from the fruit and makes everything juicy) and a teaspoon of vanilla, rub this through the fruit and allow to stand for half an hour, tossing the fruit every once in a while to mix the juice through. The longer you leave this the better, but we know life is busy! Bake at 180 degrees for 20-30 minutes until fruit is soft and you have a delicious way to use up fruit!
