We start this curry by making our very own red curry paste and you'll quickly taste why it's the hero in this meal. With the paste as the base, the curry comes together with the addition of fresh blue grenadier, eggplant, lime leaves, carrots, fresh herbs, garlic and ginger. The curry is paired with a coconut rice which is made from freshly toasted coconut and basmati rice. Now, this is how to enjoy fish without all the fishiness of fish!
