Sometimes dinner just needs to be quick, easy and a little bit fun - and that’s exactly what these Quick (Nutritious) Mexican Rice Bowls are all about. Using our We Feed You Beef Bolognese Share Pack as the base, you can create a vibrant, flavour-packed meal in minutes.
The best part? This recipe is flexible. Think of it as a “choose your own adventure” dinner. Mix and match whatever you’ve got in the fridge. No capsicum? Swap in zucchini or corn. Out of kidney beans? Try black beans or chickpeas. Want extra crunch? Add shredded cabbage or cucumber. You really can’t go wrong.
These bowls are perfect for families too. Lay all the toppings out on the bench and let everyone build their own creation. It’s a fun way to get kids involved and make sure every plate is customised to taste.

This is is based on what I had to hand, but you (clearly not enough fresh coriander).
Ingredients
Mexican Beef

1 × 450g We Feed You Beef Bolognese Share Pack

¼ red capsicum, chopped

¼ green capsicum, chopped

1 × 400g tin kidney beans, drained

2 cups baby spinach (optional). I addd it for extra nutrition and it was in the fridge about to hit is BB date.

2 tsp Mexican spice mix (e.g. Mingle Mexican Fiesta taco seasoning) — add more for stronger flavour if desired
To Serve

2 cups cooked steamed rice

Guacamole (1 avocado mashed with 1 tsp lime juice, ⅛ diced red onion, salt & pepper to taste)

2 cups sliced lettuce

1 cup (125 g) grated cheddar

1 cup (150 g) grape tomatoes, halved

¼ bunch coriander, roughly chopped
-
1 jalapeño, sliced (optional)
-
Sour cream or Greek yoghurt
-
Lime wedges

Instructions
Make the Mexican Beef

Heat the We Feed You Bolognese Share Pack in the microwave for 5–6 minutes or until no longer solid.

Transfer to a saucepan, add spice mix, capsicums, spinach and beans. Stir, bring to a gentle simmer and cook for 2–3 minutes until capsicum is slightly softened.
Assemble the Bowls

Divide steamed rice among four bowls.

Top with Mexican beef mixture.

Add guacamole, lettuce, cheddar, tomatoes, coriander, jalapeño (if using), and a dollop of sour cream or Greek yoghurt.

Finish with a squeeze of fresh lime.
Serve immediately — or lay everything out “DIY style” so everyone can build their own bowl adventure.
