Italian Baked Chicken with Capers, Olives and Brown Rice

This meal is the We Feed You take on a traditional Italian hunter style alla cacciatore which is often made with locally hunted chicken or rabbit. 

 

Our version uses chicken breast fillets which are diced then baked in the oven in a slow simmering tomato based sauce until tender. This sauce is packed with flavour from the combination of capers, Kalamata olives, oregano and dry white wine. It's a perfect warming autumn meal served with brown rice and broccoli. 

 

This meal is also suitable for anyone following a gluten free, low FODMAP or lactose free diet. It also fits in our Active Lifestyle range of meals.
