This dahl is a mix of sweet pumpkin, red lentils, baby spinach, tomato, fresh coriander and lemon juice. The coconut yoghurt helps bring a superb flavour and wonderfully creamy texture to the dahl.
Serve on rice with a side of fresh cucumber raita, green peas, steamed cauliflower or broccoli. Add chilli, papadums or naan bread.
