This vegan meal is a wonderful combination of eggplant and zucchini marinated in miso, ginger and Tamari. This is then served with edamame and carrots with silky rice noodles. It has a hint of chilli but you can certainly add more if you enjoy the heat. 

This meal is also suitable for anyone following a gluten free, lactose free, vegan or Low FODMAP diet.
